Acclaimed winery Round Pond Estate, known for its world-class, limited-production vintages of Cabernet Sauvignon and Sauvignon Blanc, is joining forces with zinc@shade at Shade Hotel and is inviting guests to wine and dine in a sophisticated beach atmosphere on Sunday, May 20 at 6 p.m.
The first course is a melon and grapefruit salad with sweet Dungeness crab, butter lettuce, shaved fennel, dried apricots and melon with grapefruit honey and vinaigrette drizzled with Round Pond’s basil-infused olive oil. The wine pairing is 2010 Estate Sauvignon Blanc.
The second course features almond-crusted Alaskan halibut with Meyer lemon buerre blanc and includes English pea puree, pea shoots and orange infused olive oil. The course is paired with Round Pond’s 2010 Reserve Sauvignon Blanc.
Diners can enjoy a third course of pan-seared albacore in a Portobello vinaigrette and black cherry reduction with white corn risotto and braised Swiss chard and Nueske’s bacon. The wine pairing is 2008 Syrah.
The fourth course includes grilled ancho-dusted New Zealand lamb chops with Oaxaca black mole, accompanied by roasted red pepper mashed and braised Brussels sprouts with Spanish chorizo. Wine paired with the fourth course is a 2009 Napa Valley Cabernet Sauvignon.
The fifth and final course of the night will allow guests to delight in blood orange crème brulee with vanilla whipped cream and blood orange compote.
The grand finale of the wine dinner includes an aperitif with Round Pond infused citrus syrup.
