Summer is not yet over, nor is the fresh the summer produce available. Our garden was slow growing our produce this year, and now we are being taken over with tomatoes and eggplant. We made this kid friendly summer salad last night, and there was not a crumb leftover.
- 1 cup of diced cherry tomatoes
- 1 1/2 cans of non-sodium corn
- 1 squash
- 1 container of mozzarella balls
- 6 basil leaves
- 4 Tbl. olive oil
- juice from 1/2 of a lemon
Mix all the ingredients together, and enjoy. How easy is that?
